Goat Cheese Sauteed Mushrooms

1 tbsp extra-virgin olive oil

16 oz of your favorite mushrooms, quartered

Heat your olive oil in your saucepan and toss in your mushrooms. Season with salt and pepper, and gently toss your mushrooms (only once). Allow them to brown, and then toss them once more. Turn down the heat to low. 

6 tbsp unsalted butter

1 clove garlic, minced

1 tsp Deaf Girl Walking lemon extract

Add to the pan and coat mushrooms until everything is fragrant. 

4-6 oz herbed goat cheese

¼ cup grated Parmesan cheese

Add cheeses to the pan and stir until smooth and creamy. 

Optional:

1 tsp crushed red pepper

Fresh thyme or fresh parsley

Garnish with fresh lemon slices and serve with warm, crusty bread.
